1 teaspoon vanilla extract

Blend the Mango: In a blender, combine the diced mangoes, coconut milk, granulated sugar, lime juice, vanilla extract, and a pinch of salt. Blend on high until the mixture is smooth and creamy. Taste the mixture and feel free to adjust the sweetness by adding more sugar if desired.

    Incorporate Shredded Coconut: Transfer the blended mango mixture into a mixing bowl. Gently fold in the shredded coconut until it is well-distributed throughout the mixture, ensuring each bite is filled with coconut goodness.
