Ingredients

2 ripe mangoes, peeled and diced (about 2 cups)

1 cup plain Greek yogurt

1/2 cup coconut milk (or any preferred milk alternative)

1/4 cup honey (or maple syrup for a vegan option)

Zest of 2 limes

Juice of 2 limes

1 teaspoon vanilla extract

A pinch of sea salt

Optional toppings: Toasted coconut flakes and extra lime zest

Instructions

Prepare the Mangoes: Start by peeling the ripe mangoes and cutting them into small, bite-sized pieces. You should aim for about 2 cups of diced mango to ensure optimal flavor.

Blend the Mixture: Using a high-speed blender or food processor, combine the diced mango, Greek yogurt, coconut milk, honey, lime zest, lime juice, vanilla extract, and a pinch of sea salt. Blend the mixture until it reaches a smooth and creamy consistency. Taste the blended concoction and adjust the sweetness as desired by adding more honey or maple syrup.

Set Up the Pan: Line a baking dish or a shallow pan (approximately 9x9 inches) with parchment paper, letting the edges extend over the sides. This will help you easily lift the frozen yogurt out once it’s set.

Pour and Spread: Carefully pour the smooth mango yogurt mixture into the prepared baking dish. With the help of a spatula, spread the mixture evenly across the base of the dish to ensure uniform slicing.

Freeze: Place the baking dish in the freezer and allow it to freeze for a minimum of 4 to 6 hours, or until it is completely solid.

Cut into Slices: After the yogurt mixture is fully frozen, remove the baking dish from the freezer. Grasp the overhanging parchment paper to lift the frozen yogurt slab out carefully, and place it on a cutting board. Use a sharp knife to slice it into your desired shapes—squares or rectangles work excellently.

Serve and Enjoy: Before serving, enhance your slices by sprinkling toasted coconut flakes and additional lime zest over the top for a delightful tropical crunch. Enjoy them immediately, or store any leftovers in an airtight container in the freezer for later indulging.
