2 cups fresh pineapple chunks (can use frozen for convenience)

1 cup coconut yogurt (choose dairy-free for a vegan option)

1/2 cup coconut milk (use canned for creaminess or carton for a lighter choice)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

Pinch of sea salt

Optional garnishes: shredded coconut and additional pineapple chunks

Instructions
 

Begin by placing the pineapple chunks, coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of sea salt into a blender. Blend on high speed until the mixture reaches a silky smooth and creamy consistency.

    After blending, taste your mixture. If you prefer it sweeter, gradually add more honey or maple syrup, blending briefly after each addition to incorporate.

      For those who enjoy a bit of texture, consider folding in extra pineapple chunks or a handful of shredded coconut into the mixture after blending. This will add delightful bites in your pops.

        Carefully pour the creamy mixture into popsicle molds, making sure to leave a small gap at the top of each mold for expansion as the pops freeze.

          Insert popsicle sticks into the molds, ensuring they are upright, and place the molds in the freezer. Allow them to freeze for a minimum of 4 hours or until fully solidified.

            To remove the pops once frozen, hold the molds under warm running water for a few seconds to slightly warm the outside. Gently wiggle and pull to release the pops.
