1 cup fresh or frozen raspberries

1 cup coconut cream (make sure it's chilled)

2 tablespoons honey or maple syrup (adjust based on your desired sweetness)

1 teaspoon vanilla extract

1/4 cup crushed graham crackers (for topping)

Fresh mint leaves (for garnish, optional)

Begin by peeling the ripe bananas and slicing them into small chunks. Place the banana slices into a blender or food processor.

    Next, incorporate the raspberries, chilled coconut cream, honey (or maple syrup), and vanilla extract into the blender with the banana.

      Blend the mixture on high speed until you achieve a smooth and creamy consistency. Remember to stop occasionally to scrape down the sides of the blender for an even blend.

        Prepare a muffin tin by lining each cup with cupcake liners; this will make removing the cups easier later on.

          Carefully pour the raspberry banana mixture into each cupcake liner, filling them about three-quarters of the way full to allow for expansion during freezing.

            For an extra layer of texture and flavor, sprinkle a generous layer of crushed graham crackers on top of each filled cup.

              Place the muffin tin in the freezer and allow the cups to freeze for approximately 4 hours, or until they are completely firm and set.

                Once frozen, gently remove the cups from the muffin tin. Carefully peel away the cupcake liners from each frozen cup.
