2 cups Greek yogurt (plain or vanilla)

1 cup fresh raspberries (plus a few extra for garnish)

Zest of 1 lemon

Juice of 1 lemon

2-3 tablespoons honey or maple syrup (adjust to your desired sweetness)

A pinch of salt

Prepare the Mixture: In a mixing bowl, combine the Greek yogurt, lemon zest, lemon juice, honey (or maple syrup), and a pinch of salt. Use a whisk or spatula to blend thoroughly until the mixture is creamy and uniform. Taste the mixture and adjust the sweetness according to your preference, adding more honey or maple syrup if desired.

    Incorporate Raspberries: Carefully fold the fresh raspberries into the yogurt mixture with a spatula. Take care not to crush the raspberries completely; leaving some whole will enhance both the texture and appearance of the bites.

      Fill the Molds: Using a spoon, fill silicone ice cube trays or small silicone muffin molds with the yogurt mixture. Aim to fill each cavity about three-quarters full to allow space for expansion while freezing.

        Freeze: Place the molds in the freezer and let the yogurt bites freeze for approximately 4 to 6 hours, or until they are solid throughout.

          Unmold and Serve: When the bites are completely frozen, carefully remove them from the molds. If they are difficult to release, run warm water over the outside of the molds for a few seconds to help loosen them.
