Ingredients

2 cups rolled oats

1/2 cup almond flour

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup frozen raspberries

1/4 cup Greek yogurt (or dairy-free alternative)

2 tablespoons powdered sugar (optional, for dusting)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven is heating, prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Oat Mixture: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. Stir the dry ingredients together thoroughly until they are evenly mixed.

Incorporate Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until the mixture is smooth and homogenous. Pour this wet mixture into the dry oat mixture and stir gently until just combined; avoid overmixing.

Form the Dough: Using your hands, scoop out portions of the mixture and roll them into small balls, each about 1 inch in diameter. Place the balls on the prepared baking sheet, and gently press each one down to create a circular shape approximately 1/4 inch thick. You should yield around 12 to 15 oat rounds.

Bake the Oat Rounds: Bake the oat rounds in your preheated oven for 15-18 minutes, just until the edges are golden brown. Once baked, allow the rounds to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Create the Raspberry Filling: While the oat rounds cool, prepare the raspberry filling. In a small saucepan, place the frozen raspberries over medium heat. Cook for about 5 minutes, stirring occasionally, until the raspberries soften and release their juices. Remove the saucepan from the heat and let the mixture cool to room temperature.

Assemble the Sandwiches: Take half of the cooled oat rounds and spread a generous layer of Greek yogurt over each. Add a spoonful of the prepared raspberry filling on top of the yogurt, then place another oat round on top to create a sandwich.

Firm Up the Sandwiches: Arrange the assembled oat sandwiches on a plate and place them in the freezer for at least one hour. This will help the filling firm up and make them easier to serve.

Serve: After freezing, enjoy your Raspberry Oat Sandwiches directly from the freezer. For an extra touch of sweetness, sprinkle with powdered sugar just before serving.
