Frozen Yogurt Blueberry Chia Muffin Bars

1 ½ cups whole wheat flour

½ cup rolled oats

1 cup Greek yogurt (plain or vanilla)

½ cup honey or maple syrup

1 large egg

1 tsp vanilla extract

½ cup unsweetened almond milk

1 tbsp chia seeds

1 ½ cups fresh blueberries (frozen blueberries can also be used)

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ tsp cinnamon (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper, ensuring there's an overhang on the sides to facilitate easy lifting of the bars once baked.

    Combine the Wet Ingredients: In a large mixing bowl, whisk together the Greek yogurt, honey or maple syrup, egg, vanilla extract, and almond milk until the mixture is smooth and well-blended.

      Mix the Dry Ingredients: In another bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, salt, cinnamon (if desired), and chia seeds until evenly distributed.

        Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture into the bowl with the wet ingredients. Stir gently until just combined, taking care not to overmix the batter.

          Fold in the Blueberries: Carefully fold in the blueberries, ensuring they remain intact and are evenly dispersed throughout the batter.

            Pour and Spread: Pour the prepared batter into the lined baking dish. Use a spatula to spread the mixture evenly across the dish.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes. The bars are done when a toothpick inserted into the center comes out clean or with a few moist crumbs.

                Cool Down: After baking, let the bars cool in the baking dish for approximately 10 minutes. Then, using the parchment overhang, lift the bars out and transfer them to a wire rack to cool completely.

                  Slice and Store: Once cooled to room temperature, slice the bars into 12 equal pieces. Store them in an airtight container in the refrigerator. These bars are especially delightful when enjoyed chilled, providing a refreshing taste reminiscent of frozen yogurt!
