1 cup cream cheese, softened (for optional frosting)

Prepare the Carrots: Begin by peeling and finely grating the carrots. For quicker preparation, consider using a food processor fitted with a grating attachment.

    Mix Ingredients: In a large mixing bowl, combine the grated carrots, Greek yogurt, honey (or maple syrup), and vanilla extract. Use a spatula to stir the mixture thoroughly until the wet ingredients are evenly blended into the shredded carrots.
