1/2 teaspoon ground cinnamon (plus extra for garnish)

1/2 cup frozen yogurt (choose your favorite flavor)

1/2 cup granulated sugar (for rolling the cookie bombs)

1/2 teaspoon ground cinnamon (for rolling)

1 cup chocolate chips (optional, for dipping)

Prepare the Dough: In a medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt until well blended. Set aside. In a large mixing bowl, use a hand mixer or standalone mixer to cream together the softened butter, packed brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-4 minutes.

    Add Wet Ingredients: To the butter mixture, add the egg, vanilla extract, and ground cinnamon. Mix until everything is well combined. Slowly add the dry flour mixture to the wet ingredients, mixing on low speed until just combined; be cautious not to overmix, as the dough should be soft and cohesive.

      Chill the Dough: Cover the dough tightly with plastic wrap and refrigerate it for about 30 minutes. This will help the dough firm up for easier handling.

        Scoop the Frozen Yogurt: While the dough is chilling, use a small cookie scoop or a tablespoon to scoop out small balls of frozen yogurt (approximately 1 tablespoon each) onto a baking sheet lined with parchment paper. Place the baking sheet in the freezer and let the yogurt balls harden for about 1 hour.

          Form the Cookie Bombs: Preheat your oven to 350°F (175°C). Once the dough has chilled, take approximately 1.5 tablespoons of the chilled dough and flatten it in your palm. Place one of the frozen yogurt balls in the center of the dough circle and carefully wrap the cookie dough around the yogurt, ensuring it is completely sealed. Roll the filled dough into a smooth ball.

            Roll in Cinnamon Sugar: In a small bowl, combine the 1/2 cup of granulated sugar with 1/2 teaspoon of ground cinnamon. Roll each cookie bomb thoroughly in the cinnamon-sugar mixture until fully coated.

              Bake: Arrange the cookie bombs on a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are a lovely golden brown. The centers may appear slightly soft, but they will firm up as they cool.

                Cool and Serve: Allow the cookie bombs to cool on the baking sheet for about 5 minutes before carefully transferring them to a wire rack to cool completely. If desired, melt the chocolate chips in a microwave-safe bowl at 30-second intervals, stirring until smooth, and serve as a delicious dipping sauce alongside the cookie bombs.
