Lining your baking pan is an essential step in preparing Cranberry Walnut Bliss Bars. Using parchment paper not only prevents the bars from sticking but also makes for an effortless release once they are cooled. To prepare your baking dish, take a 9x9-inch (or an 8x8-inch) square baking pan and cut a piece of parchment paper large enough to cover the bottom and sides of the pan. This will create a "sling" effect, allowing you to lift the bars out easily after they have set.

Ingredients

2 cups plain Greek yogurt (unsweetened)

1/2 cup honey or maple syrup (your choice)

1 teaspoon pure vanilla extract

1 cup fresh or dried cranberries (chopped if using dried)

1 cup walnuts, finely chopped

1/4 teaspoon sea salt

1/2 cup rolled oats (for a delightful texture)

1/2 teaspoon ground cinnamon (optional for warmth)

Instructions

Prepare the Base: In a spacious mixing bowl, combine the plain Greek yogurt with honey (or maple syrup), pure vanilla extract, and sea salt. Use a whisk or spatula to mix until the ingredients are fully integrated and the mixture is smooth and creamy.

Add the Mix-ins: Carefully fold in the chopped cranberries, walnuts, rolled oats, and optionally the ground cinnamon. Ensure that these ingredients are evenly distributed throughout the yogurt mixture without over-mixing.

Line the Pan: Take an 8x8 inch (or similar-sized) baking dish, and line it with parchment paper. Make sure to leave some overhanging paper on the sides; this will assist greatly when it comes to lifting the bliss bars out later.

Spread the Mixture: Pour the yogurt mixture into the prepared baking dish. Use a spatula to spread it into a level layer. Give the dish a gentle tap on the counter to release any trapped air bubbles, promoting an even texture.

Freeze the Bars: Transfer the baking dish to the freezer. Allow the mixture to freeze for a minimum of 4 to 6 hours, or until it has solidified completely.

Cut the Bars: Once the mixture is firm and completely frozen, use the parchment overhang to lift it out of the baking dish. Place it onto a cutting board and cut it into squares or bars to your preferred size.

Serve or Store: Relish these bliss bars immediately, or carefully place them in a single layer in an airtight container. If stacking multiple layers, use parchment paper between them to prevent sticking. These bars can be stored in the freezer for up to 2 months.

Prep Time, Total Time, Servings: 15 minutes | 6 hours | Makes approximately 12 bars.

Enjoy these deliciously wholesome bars as a perfect snack or a sweet treat!
