Ingredients

2 cups plain Greek yogurt

1/2 cup creamy peanut butter

2 tablespoons honey or maple syrup (for a vegan option)

2 ripe bananas, thinly sliced

1/4 cup dark chocolate chips (or dairy-free chocolate of your choice)

1/4 cup chopped nuts (such as almonds, walnuts, or peanuts)

1 tablespoon chia seeds (optional for added nutrition)

Pinch of sea salt

Instructions

Prepare the Baking Sheet: Begin by lining a baking sheet with parchment paper. Choose a baking sheet approximately 10x15 inches for optimal results, but feel free to use a different size if you prefer thicker or thinner bark.

Create the Yogurt Mixture: In a large mixing bowl, add the Greek yogurt, creamy peanut butter, honey (or maple syrup), and a pinch of sea salt. Using a whisk, blend the ingredients together until the mixture is silky smooth and well combined.

Spread the Yogurt Mixture: Carefully pour the yogurt base onto the lined baking sheet. With the help of a spatula, spread the mixture evenly across the sheet to achieve your desired thickness, ideally around 1/2 inch.

Top with Delicious Additions: Evenly place the banana slices on top of the yogurt layer, followed by a generous sprinkling of dark chocolate chips, chopped nuts, and chia seeds (if desired). Gently press the toppings into the yogurt mixture to ensure adhesion.

Freeze the Bark: Transfer the baking sheet to the freezer and allow the bark to freeze for at least 4-6 hours, or until it is completely firm.

Break into Snackable Pieces: Once fully frozen, take the baking sheet out of the freezer. Carefully peel the yogurt bark away from the parchment paper and break it into pieces of your preferred size.

Serve and Store: Serve the frozen yogurt bark immediately for a refreshing treat or store it in an airtight container in the freezer for up to 2 weeks. To prevent the bark pieces from sticking together, layer them with additional parchment paper.

Prep Time, Total Time, Servings: 15 min | 4-6 hours (freezing) | 12-16 pieces

Enjoy this delightful snack that's both nutritious and indulgent!
