Before diving into the fun of mixing and baking, start by preparing your baking pan. Use a 9x9-inch square baking dish or an equivalent-sized pan. To ensure easy removal and clean cutting later, line the bottom and sides of the pan with parchment paper, leaving an overhang on two opposite sides. This will create convenient "handles" for lifting out the finished cookie squares. Lightly grease the parchment paper with cooking spray or a thin layer of butter to prevent sticking. Preheat your oven to 350°F (175°C) while you prepare the cookie base.

Ingredients

1 cup graham cracker crumbs

1/2 cup all-purpose flour

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened at room temperature

1 large egg

1 teaspoon vanilla extract

1 cup mini marshmallows

1 cup chocolate chips

2 cups vanilla frozen yogurt

Chocolate syrup, for drizzling (optional)

Extra graham cracker crumbs, for topping (optional)

Instructions

Prepare the Baking Pan: Preheat your oven to 350°F (175°C). Take an 8x8 inch baking pan and line it with parchment paper, ensuring to leave some overhanging edges for easy removal later.

Mix the Cookie Base: In a large mixing bowl, combine the graham cracker crumbs, all-purpose flour, granulated sugar, brown sugar, baking powder, and salt. Stir the dry ingredients together until they are well blended.

Incorporate the Wet Ingredients: In a separate bowl, cream the softened butter using a hand mixer or whisk until fluffy. Add the egg and vanilla extract, mixing until the mixture is smooth. Gradually incorporate this wet mixture into the dry ingredients, mixing until a thick and slightly sticky dough forms.

Assemble the Layers: Starting with half of the cookie dough, press it evenly into the bottom of your prepared baking pan to form a solid base layer. Evenly distribute the mini marshmallows and chocolate chips over the dough. Using your hands or a spoon, dollop the remaining cookie dough atop the marshmallows and chocolate, gently spreading it to cover as much as possible.

Bake the Cookie Layer: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are lightly golden and the center appears set. Once baked, remove the pan from the oven and let it cool completely on a wire rack.

Add the Frozen Yogurt Layer: After the cookie base has cooled, take the vanilla frozen yogurt and carefully spread it evenly over the top of the cookie layer, smoothing it out with a spatula for an even finish.

Freeze to Firm: Cover the baking pan tightly with plastic wrap or foil. Place it in the freezer for at least 3-4 hours, or until the yogurt layer is firm.

Cut and Serve: Once frozen, carefully lift the dessert out of the pan using the parchment paper overhang. Cut into squares and serve immediately. If you like, drizzle chocolate syrup on top and sprinkle extra graham cracker crumbs for added texture and flavor.

Enjoy: These delightful Frozen Yogurt S’mores Cookie Squares are best enjoyed fresh. Should there be any leftovers, ensure they are stored covered in the freezer for later enjoyment.
