Frozen Yogurt Strawberry Kiwi Pops

Ingredients
  

2 cups Greek yogurt (plain or vanilla)

1 ripe banana, well-mashed

1 cup fresh strawberries, hulled and finely chopped

1 cup fresh kiwi, peeled and diced into small cubes

2-3 tablespoons honey or maple syrup (adjust to your taste preference)

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for a touch of garnish

Prepare the Fruit: Begin by thoroughly washing your strawberries and kiwi. Remove the green tops from the strawberries, then chop them into small, bite-sized pieces. Peel the kiwi and cut it into small dice. Set the prepared fruits aside in separate bowls.

    Make the Yogurt Mixture: In a large mixing bowl, add the Greek yogurt along with the mashed banana, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix everything together using a whisk or a spatula until the mixture is completely smooth and well blended.

      Layer the Pops: Take your popsicle molds and spoon in about a third of the yogurt mixture to create the first layer. Next, sprinkle a layer of the chopped strawberries evenly over the yogurt. Follow this with a layer of the diced kiwi. Repeat the layering process until the molds are nearly full, leaving a small gap at the top to allow for expansion as they freeze.

        Insert the Sticks: Once you’ve filled the molds, gently insert popsicle sticks into the center of each mold. If the yogurt mixture is too thick to keep the sticks upright, place the molds in the freezer for about 30 minutes to partially set the mixture before inserting the sticks.

          Freeze: Carefully place the filled molds into the freezer and allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid.

            Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds. This will help loosen the popsicles. Gently pull them out of the molds. If you wish, you can garnish each fruity pop with fresh mint leaves for a delightful presentation.
