Ingredients

4 large whole wheat tortillas

1 cup hummus (can be store-bought or homemade)

1 red bell pepper, thinly sliced

1 cucumber, julienned

1 carrot, grated

1 cup baby spinach leaves

½ cup cream cheese, softened (optional for added creaminess)

¼ teaspoon garlic powder

¼ teaspoon black pepper

1 tablespoon fresh lemon juice

Fresh herbs (such as parsley or dill) for garnish

Instructions

Prepare the Cream Cheese Spread (Optional): In a small mixing bowl, combine the softened cream cheese, garlic powder, black pepper, and fresh lemon juice. Stir until the mixture is smooth and creamy. This spread will enhance the richness and flavor of your pinwheels.

Spread the Base: On a clean, flat surface, place each tortilla. Using a spatula or the back of a spoon, evenly spread about ¼ cup of hummus over each tortilla, making sure to leave a 1-inch border around the edges. This will help keep the filling secure when you roll them.

Layer the Veggies: On top of the hummus, neatly arrange the thin slices of red bell pepper, julienned cucumber, grated carrot, and a handful of baby spinach leaves. Spread the vegetables evenly over the hummus to ensure a burst of flavor in every bite.

Roll it Up: Starting from one edge, carefully and tightly roll each tortilla, making sure to keep all the filling inside as you go. Once rolled up completely, place them seam-side down. Repeat this step for the remaining tortillas.

Slice the Pinwheels: With a sharp knife, slice each rolled tortilla into 1-inch thick pinwheels. From each tortilla, you should yield 8-10 lovely pinwheels, making them perfect for sharing.

Serve: Arrange the sliced pinwheels on a beautiful serving platter. For a touch of elegance, garnish with fresh herbs scattered on top. For a delightful presentation, drizzle a little extra hummus on the plate and provide toothpicks for easy serving.
