Ingredients

1.5 lbs flank steak, trimmed and cut into bite-sized pieces

1.5 lbs baby potatoes, halved

4 tablespoons unsalted butter, melted

6 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 teaspoons paprika

1 teaspoon salt

1/2 teaspoon freshly cracked black pepper

1 tablespoon olive oil

Optional: Fresh parsley, finely chopped for garnish, lemon wedges for serving

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it’s hot and ready for roasting.

Prepare the Marinade: In a large mixing bowl, combine the melted butter, minced garlic, chopped rosemary, chopped thyme, paprika, salt, and black pepper. Whisk the mixture together until all ingredients are thoroughly blended.

Marinate the Steak: Add the bite-sized pieces of flank steak to the marinade bowl. Gently stir to coat each piece evenly with the mixture. Allow the steak to marinate for at least 15 minutes. This will enhance the flavors while you prepare the potatoes.

Prepare the Potatoes: In a separate mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Make sure each potato half is well coated for optimal flavor and crispness.

Arrange on Sheet Pan: Line a large baking sheet with parchment paper for easier cleanup. Spread the seasoned potatoes in a single layer on one side of the sheet pan.

Add the Steak: Using a slotted spoon, transfer the marinated steak pieces onto the other side of the sheet pan. Ensure they are evenly spaced to promote even cooking.

Roast Everything Together: Place the sheet pan in the preheated oven. Roast everything for 20-25 minutes, or until the steak reaches your desired doneness and the potatoes are tender and golden brown. Toss the potatoes and steak halfway through cooking for even browning.

Garnish and Serve: Once cooked, carefully remove the sheet pan from the oven. For an added touch, sprinkle chopped fresh parsley over the steak and potatoes for a vibrant finish. Serve the dish warm with lemon wedges on the side to squeeze over, enhancing the flavors.

                  Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 4

                    - Presentation Tips: For an appealing presentation, arrange the steak and potatoes on a large platter. Drizzle any remaining butter and herbs from the sheet pan over the top before serving.
