Ingredients

1 whole chicken (approximately 4-5 lbs)

4 cloves garlic, finely minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon extra virgin olive oil

1 lemon, cut in half

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Instructions

Preheat the Oven: Set your oven to 375°F (190°C) to ensure it's hot and ready for roasting.

Prepare the Herb Mixture: In a medium bowl, blend together the minced garlic, rosemary, thyme, parsley, olive oil, smoked paprika, salt, black pepper, onion powder, and garlic powder. Stir until all ingredients are evenly combined into a cohesive paste.

Season the Chicken: Pat the chicken dry with paper towels to help the skin crisp up during roasting. Generously rub the herb mixture all over the chicken, making sure to work some underneath the skin for added flavor.

Stuff the Chicken: Squeeze the juice from one half of the lemon into the cavity of the chicken. Place both lemon halves inside the cavity to impart a zesty aroma and retain moisture during cooking.

Truss the Chicken (Optional): For even cooking, you may choose to tie the chicken legs together with kitchen twine and tuck the wing tips under the body. This step is optional but helps maintain a neat shape.

Roast the Chicken: Place the seasoned chicken in a roasting pan, positioning it breast-side up. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C), measured at the thickest part of the thigh.

Let it Rest: Once cooked, carefully remove the chicken from the oven and cover it loosely with aluminum foil. Allow it to rest for about 10-15 minutes; this resting period ensures the juices redistribute throughout the meat for a succulent taste.

Serve: Carve the chicken into portions and arrange on a serving platter. Drizzle the pan juices over the chicken for added flavor and serve alongside your choice of sides.
