4 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon paprika

1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)

1/2 teaspoon red pepper flakes (optional, for heat)

Prepare the Zoodles:

    Begin by spiralizing the zucchinis using a spiralizer to create long noodles. If you don't have this tool, you can also use a vegetable peeler to slice the zucchinis into thin strips. Set the prepared zucchini noodles aside on a plate.

      Sauté the Shrimp:

        Heat a large skillet over medium heat and add 2 tablespoons of extra virgin olive oil. Once the oil is hot and shimmering, add the minced garlic. Sauté for about 30 seconds, stirring frequently, until the garlic is fragrant but not browned—burned garlic can become bitter.

          Season the Shrimp:

            Add the peeled and deveined shrimp to the skillet. Sprinkle them with paprika, Italian seasoning, salt, pepper, and red pepper flakes if you enjoy a bit of heat. Cook the shrimp for 2-3 minutes on each side, or until they are pink and opaque. This indicates they are fully cooked.
