2 cups Greek yogurt (choose plain for a less sweet option or flavored for extra taste)

1 cup mixed berries (combine strawberries, blueberries, raspberries, and blackberries for a colorful mix)

2 tablespoons honey or maple syrup (feel free to adjust based on your sweetness preference)

1 teaspoon vanilla extract (for added flavor depth)

Optional: fresh mint leaves (to garnish and add freshness)

Prepare the Berries: If you’re using whole strawberries, start by carefully removing the green tops (hulling) and slicing them into bite-sized pieces. Raspberries and blueberries can be used whole for convenience. Set aside the prepared berries.

    Mix the Yogurt: In a medium-sized mixing bowl, thoroughly combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir the mixture until it is uniformly blended and creamy. Taste it to see if it meets your sweetness preference; add more honey or syrup if desired.

      Layer the Pops: Take your popsicle molds and begin layering the ingredients. Start with a generous spoonful of the yogurt mixture at the base of each mold, then add a layer of mixed berries. Repeat this layering process, alternating between spoonfuls of yogurt and berries until each mold is almost full, leaving a little space at the top for expansion during freezing.

        Insert Sticks: After filling the molds, place popsicle sticks into the center of each mold. If you don’t have popsicle sticks, cover the tops of the molds securely with a piece of foil and poke the sticks through the foil for stability.

          Freeze: Transfer your filled molds into the freezer and let them freeze for a minimum of 4-6 hours, or until the popsicles are completely solid.

            Unmold and Serve: To remove the popsicles effortlessly, run warm water over the outside of the molds for a few moments. Carefully pull the pops out, ensuring they remain whole. Serve them immediately for a refreshing treat. If you like, top with fresh mint leaves for a touch of color and flavor.
