Greek Yogurt Berry Pops

Ingredients
  

2 cups Greek yogurt (plain or vanilla)

1 cup mixed berries (strawberries, blueberries, raspberries, chopped)

2 tablespoons honey or maple syrup (adjust to your sweetness preference)

1 teaspoon pure vanilla extract

Optional: 1 tablespoon chia seeds for added nutrition

Optional: Fresh mint leaves for garnish

Instructions
 

In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to mix until the mixture is smooth and homogenous.

    Carefully fold in the mixed berries using a spatula, making sure they are evenly dispersed throughout the yogurt. If desired, add the chia seeds at this stage and gently mix to incorporate them.

      Using a spoon or a small ladle, fill popsicle molds with the yogurt mixture, but be sure to leave about a quarter-inch of space at the top to allow for expansion as they freeze.

        Insert the sticks into the molds, taking care to ensure they are centered and upright.

          Place the filled molds in the freezer and allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid.

            To remove the pops from the molds once they are frozen, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull on the sticks to release the pops.
