2 cups cooked chicken breast, shredded or diced

1 cup plain Greek yogurt

1/2 cup diced cucumber (preferably seedless)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

1 tablespoon fresh lemon juice (about half a lemon)

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and black pepper, to taste

4 whole wheat pita pockets or sturdy lettuce leaves for serving

Instructions
 

In a large mixing bowl, combine the shredded or diced cooked chicken with the creamy Greek yogurt. Mix well to coat the chicken evenly.
