Ingredients

For the Chicken Filling:

1 pound boneless, skinless chicken breasts

1 cup green chili sauce (either store-bought or homemade)

1 cup diced onion

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

For the Tostada Cups:

10 small corn tortillas

Oil for frying (approximately 1 cup, canola or vegetable oil recommended)

Salt to taste

For Toppings:

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup crumbled feta cheese (or substitute with cotija cheese)

1/4 cup freshly chopped cilantro

Lime wedges for serving

Sliced jalapeños (optional, for added heat)

Instructions

Cook the Chicken:

    - In a medium pot, heat 2 tablespoons of olive oil over medium heat.

      - Add the diced onion and minced garlic, sautéing for about 3-4 minutes until they become translucent and fragrant.

        - Introduce the chicken breasts, followed by cumin, smoked paprika, salt, and pepper.

          - Pour in the green chili sauce, bring the mixture to a gentle simmer, cover the pot, and let it cook for 20-25 minutes or until the chicken is completely cooked through and tender.

            Shred the Chicken:

              - Once the chicken is cooked, transfer it to a plate and allow it to cool for a few minutes.

                - Using two forks, shred the chicken into bite-sized pieces and return it to the pot with the green chili sauce. Stir well to ensure that all the chicken is coated, and taste to adjust seasoning if necessary. Keep the filling warm over low heat.

                  Prepare the Tostada Cups:

                    - In a deep frying pan, heat the oil over medium-high heat until it reaches about 350°F (175°C).

                      - Carefully fry each corn tortilla one at a time for about 1-2 minutes, or until they turn golden brown and crisp.

                        - To shape the tortillas into cups, gently press the sides of the tortillas against the pan while frying.

                          - Once done, drain each tostada on paper towels and lightly sprinkle with salt to taste.

                            Assemble the Tostada Cups:

                              - After a brief cooling period, fill each tostada cup generously with the shredded chicken mixture.

                                - Top each cup with ample amounts of shredded lettuce, diced tomatoes, crumbled feta cheese, and a sprinkle of chopped cilantro.

                                  Serve:

                                    - Arrange the filled tostada cups attractively on a serving platter.

                                      - Accompany the platter with lime wedges for squeezing and optional sliced jalapeños for an extra kick.

                                        - Serve immediately to enjoy the delightful crunch of the tostada cups!
