Ingredients

1 block (14 oz) firm tofu

½ cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

4 whole grain sandwich rolls

1 cup coleslaw mix (cabbage and carrots)

¼ cup vegan mayo

1 tablespoon apple cider vinegar

Salt and pepper to taste

1 teaspoon smoked paprika (optional, for added flavor)

Fresh cilantro or parsley (for garnish)

Instructions

Prepare the Tofu: Begin by draining the tofu. Wrap it in a clean kitchen towel and place a heavy object, such as a cast-iron skillet, on top. Allow it to press for 20-30 minutes. This step removes excess moisture, resulting in firmer tofu that absorbs more flavors.

Slice and Marinate: After pressing, carefully slice the tofu into ½-inch thick slabs. In a mixing bowl, combine the BBQ sauce with smoked paprika (if using). Coat each tofu slice evenly with the marinade, ensuring they are well-covered. Let the slices marinate for at least 15 minutes to allow the flavors to meld.

Grill the Tofu: Preheat your grill or grill pan to medium-high heat and brush it lightly with olive oil to prevent sticking. Once hot, add the marinated tofu slices. Grill for about 4-5 minutes on each side, or until they develop attractive grill marks and are heated through. For extra flavor, consider basting the tofu with additional BBQ sauce while grilling.

Make the Coleslaw: In a separate mixing bowl, combine the coleslaw mix, vegan mayo, apple cider vinegar, and a pinch of salt and pepper. Mix until everything is well incorporated. Taste and adjust the seasoning as needed to suit your preferences.

Assemble the Sandwiches: Slice the whole grain sandwich rolls in half. Lay a slice of grilled tofu on the bottom half of each roll, then generously top with the prepared coleslaw. Close the sandwiches with the top half of the rolls. For an extra touch, you can garnish the sandwiches with fresh cilantro or parsley.

Serve and Enjoy: Serve your smoky grilled BBQ tofu sandwiches immediately while they’re still warm. For a delightful pairing, consider serving them alongside sweet potato fries or a fresh side salad.
