Ingredients

8 oz (225g) pasta (penne or fusilli are great choices)

2 boneless, skinless chicken breasts

2 tablespoons olive oil, divided

Salt and freshly ground black pepper, to taste

2 cloves garlic, minced

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/3 cup fresh basil leaves, chopped

1 tablespoon balsamic glaze

Freshly grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta, reserving about 1/2 cup of the pasta water for later use. Set the drained pasta aside.

Grill the Chicken: Preheat your grill or a grill pan over medium-high heat. While it heats, brush both sides of the chicken breasts with 1 tablespoon of olive oil and season generously with salt and pepper. Grill the chicken for approximately 6-7 minutes on each side, or until fully cooked and the juices run clear (internal temperature should reach 165°F or 74°C). Remove from the grill and allow the chicken to rest for a few minutes before slicing into strips.

Prepare the Bruschetta Mixture: In a substantial mixing bowl, combine the halved cherry tomatoes, minced garlic, the remaining tablespoon of olive oil, a pinch of salt, freshly ground black pepper, and chopped basil. Toss the ingredients well to ensure everything is evenly coated. Allow this mixture to sit at room temperature for about 10 minutes. This resting time allows the flavors to develop and intensify.

Combine Pasta and Bruschetta: Add the cooked pasta and halved mozzarella balls to the bruschetta mixture. Gently toss everything together, adding a splash of the reserved pasta water if the mixture seems dry. The pasta water helps create a light sauce that clings to the pasta beautifully.

Assemble the Dish: Using bowls or plates, divide the pasta mixture evenly. Top each serving with the sliced grilled chicken. Drizzle a bit of balsamic glaze over each dish for an extra pop of flavor, and finish with a generous sprinkle of freshly grated Parmesan cheese. Optionally, garnish with extra basil leaves for a fresh touch.

Serve and Enjoy: Serve the Grilled Chicken Bruschetta Pasta immediately while it's warm, enjoying the delightful combination of flavors and textures with every bite!
