2 boneless, skinless chicken breasts

1 cup fresh mozzarella cheese, sliced

1/2 cup fresh basil leaves

1/4 cup balsamic glaze

4 ciabatta rolls (or your favorite sandwich bread)

2 tablespoons olive oil

Salt and pepper, to taste

Marinate the Chicken: In a medium bowl, whisk together the olive oil, salt, and pepper until well combined. Add the chicken breasts, ensuring they are evenly coated with the marinade. Cover the bowl and let it sit at room temperature for at least 30 minutes or refrigerate for up to 2 hours to allow the flavors to permeate the chicken.

    Preheat the Grill: Heat your grill or grill pan to medium-high heat to ensure a great sear on the chicken.

      Grill the Chicken: Place the marinated chicken on the preheated grill. Cook for approximately 6-7 minutes on one side, making sure to leave enough space between the pieces for even cooking. Flip the chicken and grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the surface is beautifully charred. Once done, remove the chicken from the grill and allow it to rest for 5 minutes to retain its juices.
