Ingredients

8 slices of sourdough bread

1 cup fig jam (store-bought or homemade)

8 oz creamy goat cheese, softened to room temperature

4 oz sharp cheddar cheese, shredded

4 oz prosciutto, thinly sliced

4 tbsp unsalted butter, softened

Fresh arugula or spinach for garnish (optional)

1 tbsp balsamic glaze for drizzling (optional)

Instructions

Prepare the Bread: Begin by spreading a thin layer of softened unsalted butter evenly on one side of each slice of sourdough bread. This will create a deliciously crispy crust when grilled.

Assemble the Sandwiches: Flip four slices of bread butter-side down on a clean surface. On the unbuttered side, generously spread fig jam, covering each slice well. Next, evenly distribute the softened goat cheese atop the fig jam, followed by a layer of prosciutto. Finish by scattering shredded cheddar cheese over the top of the prosciutto.

Top and Close: Place the remaining four slices of bread butter-side up on top of the assembled fillings, pressing down gently to create a firm sandwich.

Heat the Grill: Preheat a non-stick skillet or griddle over medium heat until hot but not smoking.

Grill the Sandwiches: Carefully transfer the assembled sandwiches to the skillet. Grill for about 3-4 minutes per side, or until the bread is golden brown and crisp, and the cheeses have melted delightfully.

Serve: Once each sandwich is grilled to perfection, remove them from the skillet and let them rest for about a minute. Cut each sandwich in half to reveal the delectable layers. For an extra touch, garnish with fresh arugula or spinach and drizzle with balsamic glaze for a burst of flavor.

Enjoy: Serve warm and savor the delightful interplay of sweet fig jam and savory cheese and prosciutto in each bite!
