Grilled Peach & Arugula Salad

This vibrant dish combines sweet, caramelized peaches with the peppery bite of fresh arugula, creamy goat cheese, and crunchy candied nuts. Not only is it delicious, but it's also packed with nutrients, making it perfect for a light lunch or a standout side at your next gathering. 3 ripe peaches, halved and pitted

4 cups fresh arugula

½ cup crumbled goat cheese

¼ cup candied pecans (or walnuts)

2 tablespoons extra virgin olive oil, plus more for brushing

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and freshly ground black pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat, or if you’re using a grill pan, warm it over medium heat on the stovetop.

    Prepare the Peaches: Brush the cut sides of the peach halves lightly with olive oil to ensure they don’t stick when grilling.

      Grill the Peaches: Once the grill is hot, place the peaches cut-side down on the grates. Grill for approximately 4-5 minutes until you see well-defined grill marks and the peaches start to soften. Flip the peaches and grill for an additional 2-3 minutes on the skin side. Remove them from the grill and let them cool for a few minutes.

        Make the Dressing: In a small mixing bowl, combine the remaining olive oil, balsamic vinegar, honey, a pinch of salt, and a few cracks of black pepper. Whisk until the ingredients are well blended and the dressing is emulsified.

          Toss the Arugula: In a large mixing bowl, add the fresh arugula. Drizzle about half of the prepared dressing over the arugula and gently toss to ensure all the leaves are evenly coated.

            Assemble the Salad: On a large serving platter, create a bed of the dressed arugula. Slice the grilled peaches into wedges and arrange them artistically over the arugula. Evenly sprinkle the crumbled goat cheese and candied pecans on top.
