Grilled Portobello Burgers

4 large Portobello mushroom caps

1/4 cup balsamic vinegar

2 tablespoons extra virgin olive oil

2 teaspoons Dijon mustard

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and freshly cracked pepper, to taste

4 whole grain burger buns

4 slices of fresh mozzarella cheese

1 ripe avocado, sliced

1 cup baby arugula

1/2 cup sun-dried tomatoes, chopped (optional)

Pesto sauce, for spreading (optional)

Instructions
 

Marinate the Mushrooms:

    - In a small mixing bowl, whisk together the balsamic vinegar, extra virgin olive oil, Dijon mustard, dried oregano, garlic powder, salt, and freshly cracked pepper until well combined.

      - Place the Portobello mushroom caps in a shallow dish and pour the marinade evenly over them. Ensure each cap is thoroughly coated in the marinade. Cover the dish and allow the mushrooms to marinate for at least 30 minutes to absorb the flavors.

        Preheat the Grill:

          - Preheat your grill or grill pan to medium-high heat. If using a grill pan, lightly oil the surface with a brush or spray to prevent the mushrooms from sticking.

            Grill the Mushrooms:

              - Remove the mushrooms from the marinade, allowing any excess to drip off, and place them gill side down on the hot grill. Grill for approximately 5-7 minutes per side, or until they are tender and showcase beautiful grill marks. In the last minute of grilling, place a slice of mozzarella cheese on each mushroom cap to allow it to melt slightly.

                Toast the Buns:

                  - While the mushrooms are grilling, split the whole grain burger buns and place them on the grill cut side down. Toast them for about 1-2 minutes or until they are golden and crispy.

                    Assemble the Burgers:

                      - If using pesto sauce, spread a generous layer on the bottom half of each toasted bun. Place a grilled Portobello mushroom with melted mozzarella on top of the pesto. Add a few slices of creamy avocado, a handful of peppery baby arugula, and a sprinkle of chopped sun-dried tomatoes if desired. Cap the burgers with the top half of the bun.

                        Serve:

                          - Serve the burgers immediately while they are warm and savory. Pair with a side of crispy sweet potato fries or a refreshing green salad for a delightful meal.
