Ingredients

2 heads of romaine lettuce

2 tablespoons olive oil (plus extra for brushing)

Salt and freshly ground black pepper, to taste

½ cup grated Parmesan cheese

1 cup croutons (store-bought or homemade)

Lemon wedges, for garnish

For the Lemon Caesar Dressing:

1 clove garlic, minced

2 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 egg yolk (or substitute with 1 tablespoon mayonnaise for an egg-free option)

½ cup olive oil

Salt and freshly ground black pepper, to taste

Instructions

Prepare the Dressing:

In a medium-sized bowl, combine the minced garlic, freshly squeezed lemon juice, Dijon mustard, Worcestershire sauce, and egg yolk. Whisk the mixture vigorously until it is well blended. Gradually add the olive oil while continuing to whisk, allowing the dressing to emulsify. Season with salt and pepper to taste, then set it aside to allow the flavors to meld.

      Prep the Romaine:

Preheat your grill to medium heat. While it heats up, rinse the romaine heads under cold water to clean them. Cut each head of romaine in half lengthwise. After cutting, gently pat the romaine halves dry with a paper towel to remove excess moisture.

          Season the Lettuce:

Brush a thin layer of olive oil on the cut sides of each romaine half. Generously sprinkle salt and freshly ground black pepper over them to enhance flavor.

              Grill the Romaine:

Place the romaine halves cut-side down on the hot grill. Grill for approximately 3-5 minutes until they are nicely charred and slightly wilted. Once charred, carefully flip the romaine over and grill for an additional 2-3 minutes, until the edges are tender yet still retain some crispness.

                  Assemble the Dish:

After grilling, remove the romaine from the grill and let it cool for a minute. Drizzle the prepared Lemon Caesar dressing generously over each grilled half. Top with a generous sprinkle of grated Parmesan cheese, followed by a scattering of croutons for added crunch.

                      Serve:

Present the grilled romaine on a platter, accompanied by lemon wedges on the side for a zesty touch. For an extra boost of flavor, drizzle any remaining dressing over the top before serving.
