Ingredients

1 medium head of cauliflower (approximately 4 cups when riced)

1 large egg

1 cup shredded mozzarella cheese (or a dairy-free cheese alternative)

1/4 cup grated Parmesan cheese (optional)

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

Olive oil spray (for greasing)

Instructions

Prep the Cauliflower: Preheat your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower, and cut it into smaller florets. Using a food processor, pulse the florets until they achieve a rice-like consistency (around 4 cups). If you don't have a food processor, a box grater works just as well.

Cook the Cauliflower Rice: Place the riced cauliflower into a microwave-safe bowl and cover it with a microwave-safe lid or plate. Microwave on high for approximately 5-6 minutes, or until the cauliflower is tender. Allow it to cool for a few minutes once cooked.

Remove Excess Moisture: Once cooled, transfer the cooked cauliflower to a clean kitchen towel or cheesecloth. Gather the edges and wring out as much moisture as possible; this step is essential to avoid a soggy crust.

Mix the Dough: In a large mixing bowl, combine the riced cauliflower, egg, shredded mozzarella, optional Parmesan, garlic powder, oregano, salt, black pepper, and red pepper flakes. Stir the mixture thoroughly until all ingredients are well incorporated.

Shape the Crust: Line a baking sheet with parchment paper and lightly spray it with olive oil. Spoon the cauliflower mixture onto the parchment, pressing it into a circular shape approximately 1/4 inch thick.

Bake the Crust: Place the crust in the preheated oven and bake for 25-30 minutes, or until it turns golden brown with slightly crispy edges. Keep a close watch to prevent any burning.

Add Toppings: Once baked, remove the crust from the oven and let it cool for a few minutes. Layer on your choice of sauce, cheese, and assorted vegetables. Return the pizza to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve: Allow the pizza to cool for a few minutes before slicing. Serve warm and enjoy your guilt-free pizza delight!

                  Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 2-3

                    - Presentation Tips: Garnish the slices with fresh basil or a drizzle of balsamic glaze for an extra touch. Serve on a wooden board for an inviting presentation!
