Ingredients

1 ripe avocado, peeled and pitted

1/2 cup unsweetened cocoa powder

1/4 cup pure maple syrup (or substitute with honey/agave syrup for sweetness)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (choose dairy-free if preferred)

Optional toppings: shredded coconut, chopped nuts, cacao nibs, or more cocoa powder for dusting

Instructions

Prep the Avocado: In a medium mixing bowl, mash the ripe avocado using a fork or hand mixer until it becomes smooth and creamy. Make sure there are no lumps to achieve a silky texture.

Combine Ingredients: Add the unsweetened cocoa powder, maple syrup, vanilla extract, and sea salt to the bowl with the mashed avocado. Blend the mixture until all ingredients are completely combined, resulting in a smooth and shiny consistency.

Melt the Chocolate: In a microwave-safe bowl, place the dark chocolate chips. Microwave them in 30-second increments, stirring well after each interval until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate using a double boiler setup.

Mix in Chocolate: Allow the melted chocolate to cool for about a minute before incorporating it into the avocado mixture. Stir thoroughly to combine until the mixture is smooth and well-blended.

Chill the Mixture: Transfer the mixture to the refrigerator and let it chill for approximately 30 minutes. This helps the truffle mixture firm up, making it easier to roll into balls.

Form the Truffles: Once the mixture is chilled, use a small cookie scoop or your hands to portion out the mixture. Roll each portion into 1-inch balls.

Coat the Truffles: Place your chosen toppings such as shredded coconut, chopped nuts, cacao nibs, or a light dusting of cocoa powder on a plate or shallow dish. Roll each truffle in the toppings until they are well coated.

Set & Store: Arrange the coated truffles on a tray lined with parchment paper and refrigerate them for an additional 15-20 minutes to allow them to set.

Serve: Savor these delicious guilt-free truffles right away, or store them in an airtight container in the refrigerator, where they will stay fresh for up to a week!
