Ingredients

1 medium zucchini, grated (approximately 1 cup)

1 cup almond flour

1/2 cup unsweetened cocoa powder

1/2 cup pure maple syrup or honey

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted and slightly cooled

2 large eggs, room temperature

1 teaspoon pure vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (optional, for an extra chocolatey touch)

1/4 cup chopped walnuts (optional, for added texture)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, ensuring some paper hangs over the edges for easy lifting later.

Prepare the Zucchini: Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Twist and squeeze to remove as much moisture as possible. This step is crucial to avoid overly wet bars.

Mix Wet Ingredients: In a large mixing bowl, whisk together the melted coconut oil (make sure it's not too hot), maple syrup (or honey), applesauce, eggs, and vanilla extract until fully combined and smooth.

Combine Dry Ingredients: In another bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, and sea salt until well blended.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixed to keep the bars fluffy. Carefully fold in the grated zucchini, dark chocolate chips, and walnuts if using.

Pour Batter: Transfer the batter into the prepared baking pan. Use a spatula to spread and smooth the top evenly.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes. Check if done by inserting a toothpick into the center; it should come out mostly clean with a few moist crumbs for the perfect texture.

Cool: Once baked, allow the brownie bars to cool in the pan for about 10 minutes. Use the overhanging parchment paper to lift the bars out of the pan and let them cool completely on a wire rack to achieve the best texture.

Slice & Serve: After cooling, slice the bars into bites or squares. Enjoy them as a delicious guilt-free treat, or store them in an airtight container for up to one week for snacking anytime!
