Ingredients

8 large eggs

1 cup cooked, shredded chicken breast (rotisserie chicken is ideal)

2 cups fresh hatch green chiles, roasted, peeled, and diced (canned hatch green chiles can be substituted)

1 cup shredded cheddar cheese, divided

1 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped (for garnish)

1 tablespoon olive oil (for greasing the baking dish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Once heated, lightly grease a 9x13-inch baking dish with olive oil to prevent sticking.

Whisk Eggs: In a large mixing bowl, crack the 8 eggs. Add the milk, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Whisk together until the mixture is well combined and slightly frothy, ensuring all ingredients are well integrated.

Incorporate Chicken and Chiles: Fold in the shredded chicken and diced hatch green chiles into the egg mixture. Make sure they are evenly distributed throughout the mixture to ensure each bite is flavorful.

Mix in Cheese: Carefully stir in 3/4 cup of the shredded cheddar cheese, being gentle to maintain the structure of the eggs. Set aside the remaining cheese for later.

Transfer to Baking Dish: Pour the prepared egg, chicken, and chile mixture into the greased baking dish. Use a spatula to spread it out evenly, ensuring a consistent bake.

Top with Cheese: Evenly sprinkle the reserved 1/4 cup of shredded cheddar cheese over the top of the egg mixture, creating a cheesy crust that will melt beautifully during baking.

Bake: Place the baking dish in the preheated oven and bake for 35-45 minutes. The egg bake is ready when the eggs are set and the top is golden brown. A toothpick inserted in the center should come out clean.

Cool and Garnish: Once removed from the oven, let the dish cool for approximately 10 minutes to firm up slightly. Garnish the top with freshly chopped cilantro for a pop of color and flavor.

Serve: Cut the baked egg dish into squares and serve warm. For an extra kick, pair it with a side of salsa or sliced avocado. Enjoy your delicious Spicy Hatch Chile Chicken Egg Bake!
