Ingredients

8 oz penne pasta

1 lb ground turkey

1 cup Hatch green chilies, diced (you can use canned or fresh)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and black pepper to taste

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped (for garnish)

Olive oil for sautéing

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures it reaches the perfect temperature for baking while you prepare the dish.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until it’s al dente. Drain well and set it aside to cool slightly.

Sauté the Aromatics: In a large skillet, heat a small drizzle of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until the onion becomes translucent. Then, add in the minced garlic and continue to sauté for an additional minute until it is fragrant but not burned.

Brown the Ground Turkey: Integrate the ground turkey into the skillet, breaking it apart with a wooden spoon. Sprinkle in the cumin, smoked paprika, oregano, along with salt and black pepper. Cook the mixture for 7-10 minutes until the turkey is thoroughly browned and cooked all the way through.

Incorporate the Chilies and Tomatoes: Stir in the diced tomatoes and Hatch green chilies, mixing everything together. Allow this mixture to simmer for about 5 minutes, so that the flavors can meld harmoniously.

Combine Pasta and Turkey Mixture: In a large mixing bowl, combine the cooked penne pasta with the sautéed turkey mixture. Gently fold everything together until the pasta is evenly coated with the savory turkey mixture.

Prepare for Baking: Transfer the pasta and turkey mixture into a greased 9x13 inch baking dish. Use a spatula to spread the mixture out evenly across the dish for an even bake.

Add the Cheese: Generously sprinkle the shredded Monterey Jack cheese and cheddar cheese on top of the pasta mixture, ensuring an even coverage for a cheesy bake.

Bake Until Golden: Place the baking dish in the preheated oven and bake for 25-30 minutes. Keep an eye on it until the cheese is bubbly and turns a delightful golden brown.

Garnish and Serve: Once it’s out of the oven, let it cool for a few minutes before serving. Finish with a sprinkle of fresh cilantro on top for a pop of color and flavor. Enjoy your comforting Hatch Chili Turkey Pasta Bake!
