½ cup almond butter (or substitute with peanut butter)

¼ cup honey or maple syrup

½ cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon baking powder

¼ teaspoon salt

½ cup raisins or dried cranberries (optional)

¼ cup chopped nuts (such as walnuts or pecans, optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lining it with parchment paper, leaving some overhang on the sides to facilitate easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), unsweetened applesauce, and vanilla extract. Use a whisk to blend these ingredients until you achieve a smooth and homogeneous mixture.

      Prepare Dry Ingredients: In a separate bowl, thoroughly mix the rolled oats, grated carrots, ground cinnamon, baking powder, and salt. If you’re adding raisins and nuts, incorporate them into this dry mixture as well for additional flavor and texture.

        Combine Wet and Dry Mixtures: Gradually introduce the dry mixture to the wet ingredients, stirring gently until everything is just combined. Make sure the oats are fully coated with the wet ingredients, without over-mixing.
