2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 cups cooked brown rice or quinoa

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1 cup baby spinach or mixed greens

½ red onion, thinly sliced

½ cup feta cheese, crumbled

Fresh parsley or dill, for garnish

For the Tzatziki Sauce:

1 cup plain Greek yogurt

½ cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon extra virgin olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill or mint, finely chopped

Salt and freshly ground black pepper, to taste

Prepare the Chicken Marinade: In a mixing bowl, combine the olive oil, dried oregano, garlic powder, onion powder, smoked paprika, and a generous pinch of salt and pepper. Whisk until well blended. Add the chicken breasts to the bowl, ensuring they are evenly coated with the marinade. Cover with plastic wrap and let marinate for a minimum of 30 minutes in the refrigerator, or overnight for deeper flavors.

    Cook the Chicken: Heat a grill pan or nonstick skillet over medium-high heat. Once hot, remove the chicken from the marinade and place it into the pan. Cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
