Hearty Chicken and Sweet Potato Casserole

2 cups cooked chicken, shredded or diced

2 large sweet potatoes, peeled and cut into 1-inch cubes

1 cup yellow onion, finely diced

2 cloves garlic, minced

1 cup fresh or frozen broccoli florets

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup low-sodium chicken broth

¼ cup milk

½ cup Greek yogurt or sour cream

½ cup panko breadcrumbs

2 tablespoons fresh parsley, chopped (for garnishing)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to prepare for baking.

    Cook Sweet Potatoes: Place the diced sweet potatoes in a large pot and cover them with water. Bring to a rolling boil and cook for 10 to 15 minutes or until they are fork-tender. Once cooked, drain the water and set the sweet potatoes aside.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 4-5 minutes, or until the onions become translucent. Stir in the minced garlic and cook for an additional minute until it releases its fragrant aroma.

        Mix Ingredients: In a large mixing bowl, combine the shredded chicken, cooked sweet potatoes, sautéed onion and garlic, broccoli florets, chicken broth, milk, Greek yogurt (or sour cream), smoked paprika, thyme, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.

          Transfer to Dish: Grease a 9x13 inch casserole dish and pour the mixture into it, spreading it evenly to ensure uniform baking throughout.

            Add Toppings: Sprinkle the shredded cheddar cheese generously over the top of the casserole, followed by an even layer of panko breadcrumbs to create a crispy crust.
