Ingredients

1 lb ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), chopped

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust as needed)

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup corn (fresh, frozen, or canned)

Fresh cilantro, for garnish

Optional toppings: shredded cheese, sour cream, avocado slices

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, warm the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they soften and turn translucent. Stir in the minced garlic and cook for an additional 30 seconds, until aromatic.

Brown the Turkey: Introduce the ground turkey to the pot. Use a wooden spoon to break it apart as it cooks, letting it brown completely. This should take approximately 5-6 minutes. If there's excess fat, drain it off carefully.

Add Spices: Evenly sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper over the turkey and vegetables. Stir well for about 1-2 minutes to allow the spices to coat the mixture and release their flavors.

Combine the Ingredients: Pour in the diced tomatoes (with their juices), both types of beans, and the corn. Stir everything together thoroughly to ensure an even distribution, then bring the mixture to a gentle simmer.

Simmer the Chili: Lower the heat to maintain a gentle simmer, covering the pot. Let the chili simmer for 10-15 minutes. Stir occasionally to prevent anything from sticking to the bottom. If it becomes too thick, add a splash of water or broth to reach your desired consistency.

Taste and Adjust: After the chili has simmered, taste and adjust the seasoning to your liking, adding more salt and pepper as necessary.

Serve: Ladle the chili into bowls and finish with a sprinkle of fresh cilantro. Enhance each serving with optional toppings like shredded cheese, a dollop of sour cream, or creamy avocado slices. Enjoy!
