Herbed Ricotta Stuffed Chicken Rolls

4 boneless, skinless chicken breasts

1 cup ricotta cheese

½ cup grated Parmesan cheese

1 cup fresh spinach, finely chopped

2 tablespoons fresh basil, finely chopped

2 tablespoons fresh parsley, finely chopped

1 garlic clove, minced

Salt and pepper, to taste

1 teaspoon lemon zest

½ teaspoon red pepper flakes (optional)

1 cup marinara sauce

2 tablespoons olive oil

Toothpicks or kitchen twine for securing

Prep the Chicken: Begin by preheating your oven to 375°F (190°C). Take each chicken breast and carefully slice it horizontally to create a pocket, ensuring not to cut all the way through. Season the outer surface of each breast generously with salt and pepper to enhance flavor.

    Make the Filling: In a medium mixing bowl, combine the ricotta cheese, grated Parmesan cheese, chopped spinach, fresh basil, parsley, minced garlic, lemon zest, and, if using, red pepper flakes. Stir the mixture until all ingredients are well incorporated, then taste and adjust seasoning with additional salt and pepper as needed.

      Stuff the Chicken: Using a spoon, fill each pocket of the chicken breasts with a generous amount of the ricotta mixture. Be careful not to overstuff, as the filling may spill out during cooking. Secure the openings with toothpicks or tie with kitchen twine to keep the filling intact during cooking.
