Ingredients

For the Chicken & Gravy:

2 cups cooked chicken, shredded or diced

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup heavy cream

1/2 cup all-purpose flour

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

2 teaspoons dried thyme

Salt and pepper to taste

2 tablespoons olive oil

For the Biscuit Topping:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

1/2 cup shredded cheddar cheese (for added cheesiness)

Instructions

Preheat the Oven: Set your oven to preheat at 375°F (190°C).

    Prepare the Chicken and Gravy:

      - In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for approximately 4 minutes until it becomes translucent.

        - Incorporate the minced garlic and continue cooking for an additional 1-2 minutes until aromatic.

          - Gradually add the all-purpose flour, stirring constantly to create a roux. Cook this mixture for about 1 minute.

            - Slowly whisk in the chicken broth to eliminate any lumps, then add the heavy cream. Increase the heat slightly and bring the mixture to a gentle simmer, stirring occasionally until it thickens, roughly 5-7 minutes.

              - Fold in the shredded chicken, cheddar cheese, garlic powder, onion powder, thyme, salt, and pepper. Stir well to combine, then remove from heat.

                Make the Biscuit Dough:

                  - In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until thoroughly combined.

                    - Cut the cold cubed butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.

                      - Add the buttermilk and stir gently until a soft dough forms. Carefully fold in the additional shredded cheddar cheese for an extra cheesy flavor.

                        Assemble the Bake:

                          - In a greased 9x13 inch baking dish, evenly pour the creamy chicken and gravy mixture across the bottom.

                            - Use a spoon to drop generous dollops of biscuit dough over the chicken mixture, ensuring to leave gaps between each for the biscuits to rise during baking.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and fully cooked.

Serve: Allow the dish to cool for a few minutes before serving. For a touch of freshness, consider garnishing with a sprinkle of chopped herbs, such as parsley or thyme, right before placing on the table.
