1 lb boneless, skinless chicken breasts, cut into thin strips

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 red onion, thinly sliced

3 tablespoons honey

3 tablespoons freshly squeezed lime juice

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and black pepper, to taste

8 small flour or corn tortillas

Optional toppings: sliced avocado, fresh cilantro, sour cream, shredded cheese

Instructions
 

Marinate the Chicken: In a medium mixing bowl, whisk together the honey, lime juice, olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper until well combined. Add the sliced chicken to the bowl and toss to evenly coat the strips with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor infusion.

    Prepare the Vegetables: While the chicken is marinating, slice the red and green bell peppers and the red onion. Keep the sliced vegetables aside for later use.

      Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet, reserving the marinade for later. Cook the chicken for about 5 to 7 minutes, or until it is golden brown and fully cooked; the internal temperature should reach 165°F (74°C).             Warm the Tortillas: In a separate dry skillet, warm the tortillas over medium heat for about 30 seconds on each side, or until they are soft and pliable.
