Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup panko breadcrumbs

Fresh parsley, chopped (for garnish, optional)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until the mixture is smooth and well combined. This tangy-sweet marinade will infuse the chicken with flavor.

Marinate the Chicken: Add the bite-sized chicken pieces to the marinade. Use a spatula or your hands to coat each piece thoroughly. Cover the bowl with plastic wrap or a lid, and refrigerate for at least 30 minutes. For optimal flavor, you can marinate it for up to 2 hours.

Preheat the Oven: While the chicken is marinating, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup and to prevent sticking.

Coat the Chicken: After marinating, take the chicken out of the refrigerator. Allow any excess marinade to drip off. Place the panko breadcrumbs in a shallow dish. Dredge each piece of chicken in the panko, pressing firmly to ensure the breadcrumbs adhere well.

Bake the Chicken Bites: Lay the coated chicken bites in a single layer on the lined baking sheet. For added crispiness, lightly spray the tops with cooking spray or drizzle a small amount of olive oil. Bake in the preheated oven for 15-20 minutes or until the chicken is fully cooked (internal temperature should read 165°F or 74°C) and the coating is a delicious golden brown.

Serve and Enjoy: Once baked, remove the chicken bites from the oven and let them cool for about a minute. For a touch of freshness, garnish with chopped parsley. Serve the honey mustard chicken bites warm, accompanied by lemon wedges on the side for a zesty kick.
