1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

8 mini slider buns

4 oz sharp cheddar cheese, sliced

1 cup fresh arugula or baby spinach

Pickles for garnish (optional)

Marinate the Chicken: In a medium mixing bowl, whisk together the honey, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper until well combined. Add the chicken breasts to the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to infuse the chicken (you can marinate for up to 2 hours for a richer taste).

    Cook the Chicken: Heat a drizzle of olive oil in a large skillet over medium heat. Remove the marinated chicken breasts from the bowl, allowing excess marinade to drip off, and place the chicken in the skillet.
