1 lb (450g) boneless, skinless chicken thighs, thinly sliced

2 tablespoons vegetable oil, divided

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 medium onion, thinly sliced

2 cups broccoli florets

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup honey

1/4 cup Sriracha sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Chopped green onions and sesame seeds for garnish

Prepare the Sauce: In a small bowl, combine the honey, Sriracha sauce, soy sauce, rice vinegar, and the cornstarch slurry. Whisk until fully blended and set the sauce aside for later use.

    Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is shimmering, add in the sliced chicken. Season with salt and pepper to taste. Stir-fry the chicken for about 5-7 minutes or until it is thoroughly cooked and exhibits a slight caramelization. Once cooked, remove the chicken from the pan and set it aside on a plate.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Introduce the sliced onion, bell peppers, and broccoli florets. Stir-fry the vegetables for around 4-5 minutes, or until they are tender-crisp and vibrantly colored.
