Italian Sausage Stuffed Peppers

4 large bell peppers (choose your favorite color)

1 pound Italian sausage (sweet or spicy, casings removed)

1 cup cooked rice (you can use white or brown)

1 cup marinara sauce (store-bought or your homemade version)

1 medium onion, finely diced

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Olive oil, for sautéing and drizzling

Instructions
 

Preheat the Oven: Set your oven temperature to 375°F (190°C) to ensure it’s hot and ready for your stuffed peppers.

    Prepare the Peppers: Cut the tops off the bell peppers and carefully remove the seeds and membranes. Lightly coat the inside and outside of each pepper with olive oil and place them upright in a baking dish.

      Sauté the Aromatics: In a large skillet over medium heat, add a splash of olive oil. Once heated, toss in the diced onion and sauté until it becomes translucent, approximately 3-4 minutes. Next, add the minced garlic and cook for an additional minute until fragrant.

        Cook the Sausage: Add the Italian sausage to the skillet, breaking it apart with a wooden spoon. Cook until it’s browned and fully cooked through, about 6-8 minutes. Drain any excess fat if necessary.

          Combine the Filling: In a mixing bowl, combine the cooked sausage mixture with the cooked rice, half of the marinara sauce, half of the shredded mozzarella cheese, grated Parmesan cheese, Italian seasoning, salt, and pepper. Stir well until all the ingredients are fully incorporated.

            Stuff the Peppers: Carefully spoon the sausage filling into each prepared bell pepper, packing it down gently to ensure they are filled to the top. Once filled, drizzle the remaining marinara sauce over the tops of each stuffed pepper.

              Bake: Cover the baking dish with aluminum foil to keep the moisture in and bake in the preheated oven for 30 minutes.

                Add Cheese and Finish Baking: After 30 minutes, carefully remove the foil and sprinkle the remaining mozzarella cheese generously over the tops of the peppers. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove the baking dish from the oven. If desired, sprinkle fresh basil or parsley over the stuffed peppers for a burst of color and flavor. Allow the peppers to cool for a few minutes before serving.
