Ingredients

1 cup couscous

1 1/4 cups water or low-sodium chicken broth

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 1 lemon

2 cloves garlic, finely minced

1 teaspoon dried oregano

Salt and freshly ground pepper, to taste

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, roughly chopped

1/4 cup feta cheese, crumbled (optional)

Instructions

Cook the Couscous: In a medium saucepan, bring the 1 1/4 cups of water or chicken broth to a rolling boil. Once boiling, remove the pan from heat. Stir in the couscous, cover with a lid, and let it rest for 5 minutes. After resting, use a fork to fluff the couscous and allow it to cool completely.

Prepare the Chicken Marinade: In a small mixing bowl, whisk together the olive oil, freshly squeezed lemon juice, lemon zest, minced garlic, oregano, and a pinch of salt and pepper until well combined. Place the chicken breasts into a shallow dish and pour the marinade over them, ensuring they are thoroughly coated. Cover and let marinate for at least 30 minutes at room temperature or in the refrigerator for enhanced flavor.

Cook the Chicken: Preheat a grill or skillet over medium heat. Remove the chicken from the marinade and cook for approximately 6-7 minutes on each side, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Once cooked, transfer the chicken to a plate and let it rest for 5 minutes before slicing into strips.

Assemble the Jars: In clean, dry mason jars, create layers with the following ingredients:

          - Start with about 1/3 cup of cooled couscous for the bottom layer.

            - Add a layer with sliced chicken breast (approximately one breast per jar).

              - Follow with layers of halved cherry tomatoes, diced cucumber, finely chopped red onion, and roughly chopped fresh basil.

                - If desired, top each jar with a sprinkle of crumbled feta cheese for added creaminess.

Seal and Store: Tightly seal the jars and store them in the refrigerator for up to 3 days. For serving, simply shake the jar to mix the ingredients or pour everything into a bowl for an attractive salad presentation.

Enjoy: These delicious jars can be enjoyed chilled directly from the fridge, or if you prefer, warm the chicken and couscous in the microwave for 1-2 minutes before adding the fresh vegetables for a comforting meal.
