Ingredients

4 salmon fillets, each about 6 oz

4 tablespoons unsalted butter, melted

2 lemons (1 lemon sliced, 1 lemon juiced)

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed

1 cup baby spinach

Instructions

Preheat: Begin by preheating your grill or oven to 400°F (200°C) to ensure even cooking.

Prepare Foil: Cut four pieces of aluminum foil, each measuring about 12 inches long. Lay them flat on a clean work surface, ready for assembly.

Season Salmon: Place a salmon fillet in the center of each piece of foil. Generously season each fillet with salt and pepper to enhance its natural flavor.

Mix Sauce: In a small bowl, combine the melted butter, juice from one lemon, minced garlic, oregano, and thyme. Whisk the ingredients together until well blended. Drizzle this flavorful mixture evenly over each salmon fillet.

Add Vegetables: Surround the salmon fillets with the halved cherry tomatoes and trimmed asparagus. On top of each foil pack, arrange lemon slices and add a handful of baby spinach for a pop of color and nutrition.

Seal the Pack: Carefully fold the sides of the foil over the salmon and vegetables to create a tight seal. This will lock in moisture and flavors, so ensure there are no gaps or leaks.

Cook: Place the sealed foil packs directly on your grill or in the preheated oven. Cook them for approximately 15-20 minutes. The salmon should flake easily with a fork, and the asparagus should be tender when done.

Serve: With caution, open the foil packs (be careful of escaping steam!). Garnish each pack with freshly chopped parsley for a burst of freshness before serving.
