2 cans (14.75 oz each) of pink salmon, thoroughly drained and flaked

1 cup breadcrumbs (choose either panko for extra crunch or regular)

1/4 cup fresh dill, finely chopped (or substitute with 2 tablespoons of dried dill)

1/2 cup green onions, finely chopped

1 large egg

2 tablespoons fresh lemon juice

Zest of 1 lemon

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

3 tablespoons olive oil (for frying)

Optional: Fresh lemon wedges for serving

In a large mixing bowl, add the flaked salmon. Then, incorporate the breadcrumbs, chopped dill, green onions, egg, lemon juice, lemon zest, garlic powder, salt, and black pepper. Gently mix all the ingredients together using a fork or your hands until they are thoroughly blended, being careful not to overmix.

    With your hands, shape the mixture into patties approximately 2-3 inches in diameter and about 1 inch thick. You should yield around 8-10 patties, depending on the size.

      Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering but not smoking, carefully place half of the salmon patties into the skillet. Cook them for about 4-5 minutes or until they turn a golden brown on one side.

        Gently flip the patties using a spatula, adding the remaining tablespoon of olive oil if needed for better browning. Continue to cook for another 4-5 minutes on the other side until they are fully cooked through and have developed a delightful crust.

          Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Repeat the cooking process with the remaining patties.
