8 ounces fresh green beans, trimmed

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

3 tablespoons extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon sea salt

1/2 teaspoon black pepper

Fresh parsley, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot enough for roasting.

    Prepare the Marinade: In a small mixing bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, oregano, thyme, sea salt, and black pepper. Whisk together until all ingredients are thoroughly blended into a flavorful marinade.

      Toss the Potatoes: In a large mixing bowl, place the halved baby potatoes. Pour half of the prepared marinade over the potatoes, then toss the potatoes gently until they are fully coated with the marinade.

        Roast the Potatoes: Arrange the coated potatoes in a single layer on a large baking sheet, ensuring the cut sides are facing down. Roast in the preheated oven for about 25 minutes, or until they start to become golden brown.

          Prepare the Green Beans: While the potatoes are roasting, place the trimmed green beans in another mixing bowl. Add the remaining marinade and toss until the green beans are well coated with the zesty mix.
