Lemon Garlic Shrimp with Spinach Rice

1/4 cup unsalted butter

2 tbsp extra virgin olive oil

Zest and juice of 1 large lemon

Salt and freshly ground black pepper, to taste

2 tbsp fresh parsley, finely chopped (for garnish)

For the Spinach Rice:

1 cup long-grain white rice

2 cups low-sodium vegetable broth

2 cups fresh spinach, roughly chopped

2 tbsp extra virgin olive oil

1 small onion, finely chopped

2 cloves garlic, finely minced

Salt and pepper, to taste

Juice of 1/2 lemon

Instructions
 

Prepare the Spinach Rice:

    - In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Once it shimmers, add the finely chopped onion and sauté for about 4 minutes, or until it becomes translucent and tender.

      - Add the minced garlic to the onions and sauté for an additional 30 seconds, or until fragrant, taking care not to brown it.

        - Add the long-grain rice to the saucepan, stirring constantly for about 1 minute to coat it well with the oil and onion mixture.

          - Carefully pour in the vegetable broth, then season with salt and pepper. Bring the mixture to a rolling boil.

            - Reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until the rice is tender and the liquid is fully absorbed.

              - After cooking, remove the saucepan from heat. Fold in the chopped spinach and lemon juice, then fluff the rice gently with a fork and set aside.
