Lentil Soup with Lemon and Spinach

1 tablespoon olive oil

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, peeled and diced

2 celery stalks, diced

1 teaspoon ground cumin

1 teaspoon ground coriander

6 cups vegetable broth

4 cups fresh spinach, roughly chopped

Juice of 1 medium lemon (approximately 2 tablespoons)

Salt and black pepper to taste

Fresh parsley or cilantro, chopped, for garnish (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely diced onions and sauté for about 5 minutes, or until they turn translucent and soft. Then, stir in the minced garlic and cook for an additional minute, allowing the flavor to bloom.
